Yunnan charms with its spicy flavours and a focus on fresh, seasonal ingredients sourced from its abundant landscape, including mushrooms, herbs, flowers and tropical fruit. The lesser-known Guizhou features a distinctive sour and spicy yet balanced flavour profile, achieved through fermented ingredients such as pickled vegetables, the generous use of chilli peppers, and aromatic tangy elements.
